Recette de Véritable tarte des soeurs Tatin, crème mousseuse vanillée

La tarte Tatin traditionnelle aux pommes caramélisées, accompagnée d'une crème émulsionnée au fromage blanc et à la vanille.

Les ingrédients (quantités pour 6 personne(s))

Pour l'étape 1
Pomme(s) : 6 pièce(s)

Sucre semoule : 100 g
Beurre doux : 40 g
Pâte feuilletée : 200 g
Pour l'étape 2
Fromage blanc : 100 g

Sucre glace : 50 g
Crème liquide entière : 20 cl
Gousse(s) de vanille : 1 pièce(s)

Description de la recette

La réalisation des tartes

Préchauffer le four à 220 °C.

Éplucher les pommes et les tailler en 6, enlever le coeur et les pépins.

Dans une poêle, réaliser un caramel en faisant fondre le sucre (mélanger délicatement en incorporant le sucre caramélisé au sucre en poudre non fondu). Verser ce caramel dans des moules individuels à tarte Tatin et laisser durcir.
Ranger ensuite les pommes de façon harmonieuse puis disposer des morceaux de beurre froid.
Découper 6 ronds de pâte feuilletée à l'aide d'un emporte-pièce et les poser sur les pommes. Faire une croix au centre de la pâte pour permettre à la vapeur de s'échapper.
Enfourner pendant 25 min environ.

Laisser ensuite les tartes reposer avant de les retourner.


La réalisation de la crème

Mélanger le fromage blanc avec le sucre glace. Ajouter la gousse de vanille fendue en 2 et grattée, puis détendre avec la crème liquide.
Verser le tout dans un siphon, injecter le gaz et réserver.

Achieving pies
Preheat oven to 220 ° C. Peel the apples and cut into 6, remove the core and seeds. In a skillet, make a caramel by melting sugar (mix gently incorporating the sugar caramelized sugar unmelted powder). Pour the caramel into individual tarte tatin molds and let harden. Ranger then apples in harmony and have pieces of cold butter. 6 Cut puff pastry rounds with a cookie cutter and place on the apples. Make a cross in the center of the dough to allow steam to escape. Achieving cream
Mix cream cheese with icing sugar. Add the vanilla bean, split in two and scraped, then relax with the cream.

Vinaigre balsamique : 3 cl
Fleur de sel : 1 pincée(s)
Piment d'Espelette : 2 g
Coriandre fraîche : 0.25 botte(s)
Cerfeuil : 0.25 botte(s)

Description de la recette

Tailler le saumon frais en petits dés de 3 mm. Émincer la cive des oignons (la partie verte) en fines lamelles, puis ciseler les blancs d'oignons en petits dés. Râper les citrons verts pour récupérer les zestes, puis presser le jus. Laver les herbes fraîches, puis les effeuiller et les concasser .

Dans un bol, mélanger le saumon frais, la cive, les oignons blancs, les zestes des citrons verts et leur jus. Assaisonner de fleur de sel et de piment d'Espelette.

Vérifier la blancheur des pousses de soja. Éplucher le concombre et le fendre en 2, puis vider l'intérieur et le couper en fines lamelles.

Dans des assiettes creuses, disposer le soja et l'arroser d'huile d'olive et de vinaigre balsamique. Le recouvrir ensuite de fines lamelles de concombre, en les disposant en rosace. A l'aide d'un emporte-pièce, dresser le tartare de saumon au centre de la rosace, puis décorer avec quelques pluches d'herbes.

Recipe Salmon tartare with lime, bean sprouts and cucumber

Net (s) salmon : 900 g
Lemon (s) Green (s): 2 item (s)
Shoot (s) Soy: 300 g
Cucumber (s): 1 item (s)
Olive oil: 10 cl
Balsamic vinegar 3 cl
Sea salt 1 pinch (s)
Piment d'Espelette: 2 g
Coriander : 0.25
Chervil: 0.25
 
Description of the recipe

Cut fresh salmon diced 3 mm. Chop the chives and onions (green part) thinly, then chop the white onion into small dice. Grate the lime zest to recover, and then squeeze the juice. Wash fresh herbs, then pluck and crush. In a bowl, mix the fresh salmon, spring onions, white onions, green lemon zest and juice. Season with sea salt and Espelette pepper. Check the white bean sprouts. Peel the cucumber and split in two and empty inside and cut into thin strips. In bowls, have soy and drizzle with balsamic vinegar and olive oil. Then cover with thin slices of cucumber, arranging rosette. Using a cookie cutter, prepare the salmon tartare in the center of the rosette, then garnish with a few sprigs of herbs.

"For more flavor, you can add a few pieces Tartar of smoked salmon and a drizzle of olive oil."

Visited the Salvador Dali exhibition at Montmartre. It has the largest collection of Dali sculptures and original etchings and lithographs in France. Well worth the visit. It's just off la place du Tertre. We were looking for a particular print for Robert.

Returning Library Books

The weather is fining up in Paris and walks are a lot further afield than usual and very pleasant.

Geoffrey is a member of Bibliothèques de la Ville de Paris. This gives him access to 69 municipal libraries. In Paris, Geoffrey is in library heaven.

Today, we went to la Bibliothèque Parmentier in the 11th arrondissement and then on to la Bibliotèque Saint-Eloi in the 12th. We live in the 4th which borders on to the 11th and 12th.

Lunch with Damien at le Café Palais Royal / le Café Saint Honoré

Damien was our French tutor last year. He is an ex French footballer. We are keeping in touch. Last month we visited him, his wife Gaëlle and son Bastien - see earlier photo.
The restaurant he chose was closed for the week so we ended up at  le Café Palais Royal / le Café Saint Honoré on la Place du Palais Royal. Very French.

Matthieu tutors us for 2 hours a week in our apartment.
He is a teacher and assistant administrator at the local school in our area.
The school has a population of 2000 students.

The Subway is an underground metro line in Glasgow.
It is the easiest way to get around the City Centre and the West End of Glasgow.
It was opened on 14 December 1896.
It is the 3rd oldest underground metro system in the world after the London Underground and the Budapest Metro.
