Beurre doux : 30 g
Piment d'Espelette : 2 g
Réduction de vinaigre Balsamique : 5 cl
Fleur de sel : 6 pincée(s)
Huile d'olive : 5 cl
Description de la recette
Couper le chorizo en tranches fines. Décoller la peau des volailles du bout des doigts et insérer les tranches de chorizo dessous. Assaisonner puis cuire pendant 3 min dans une poêle ou dans une cocotte avec un filet d'huile d'olive. Colorer les 2 côtés en grillant la peau en premier. Débarrasser ensuite sur une plaque.

Préchauffer le four à 210 °C. Couper les courgettes en petits dés (brunoise). Couper le citron en 4, l'évider et couper la peau en petits dés. Émincer finement les oignons nouveaux. Ciseler la coriandre et conserver des feuilles pour la décoration.
Dans une cocotte, mettre une noisette de beurre et faire suer les oignons nouveaux avec une pincée de sel. Cuire 3 min et ajouter le citron et les courgettes, puis laisser cuire pendant 6 min. Ajouter la coriandre.
Enfourner les volailles à 210 °C pendant 10 à 12 min, puis les laisser reposer pendant 10 min à la sortie du four.

Dans une assiette, dresser un lit de courgettes et déposer un suprême dessus. Décorer avec quelques traits de réduction de vinaigre balsamique et de feuilles de coriandre.

A guided walk on the south side of the Marais. Local history, beautiful architecture, medieval  streets, classical mansions and Place des Vosges .


 
 
Name adopted in 2000 in memory of all the French citizens who helped or hid
Jews hunted by the Nazis and collaborators during WW II.
All the Jews who lived in this block were deported and killed by the Nazis.
it was previously named rue Grenier sur l'Eau.

Wallace Fountain (Fontaine Wallace)
These are fountains scattered throughout the city of Paris, small cast iron sculptures,
named after the Englishman Sir Richard Wallace who financed their construction.
There are 77 Fontaine Wallace still standing in Paris, most of which still function as serving water to
residents, visitors and the destitute of Parisians for whom the fountains were originally intended.
